I use stubb's beef marinade for 4 hours. I start my fire in the grill but put a few extra coals on top to block flame & then add a heaping handfull of dry applewood chips. They get just a light smoke for a few mins but when the woodchips light on fire i sear them to the color i want then move them to the otherside of the grill away from the flame to slow cook to medium. During this time i brush the steaks every so often with left over marinade from the bottle.
I put my ribeyes in a dark beer, brown sugar, teriyaki marinade. I let them sit in this mixture for about 5 hours min. As good a as ribeye already is, this makes them so sweet tasting.
