Hello all,

I am having a fantasy football draft here in about 3 weeks, i always cook for the group and i was wanting to smoke some stuffed jalepeno's, i have a question since i have never done these but know how to core them and stuff them. the question i have is how long should i smoke them and do i need to put these in a jalepeno holder or just put them on the grill grate. any help would be appreciated.

My plan for stuffing these would be half of them with cream cheese the other half with like cheddar and then wrap bacon around them. suggestions/ comments. Thanks Rod.

I just found the sight today, but for future reference, I put "Lil' Smokies" in the middle of mine with the cream cheese/rub mixture.

well everyone, thanks for the tips, recipes, ideas Etc, i decided to stuff half my peppers with cream cheese, and K.C strip steak. and the other half with chicken and then all wrapped in bacon, cooked on the Traeger grill for 1 hour and i can say they turned out better then my football draft picks. i made about 28 of them and they were gone in less than 10 minutes, they turned out incredible, wish i would have done pictures but once again i forgot. Here's what I do. Cut in half like a boat, scrape some of the membrane out with a tsp, (save a few seeds), mix 8oz cream cheese, a few tsp of any BBQ Rub you have,1/2 cup of mexican cheese blend, and the saved seeds together. Using a tsp, spoon in some of your mix. Sprinkle rub on top. add meat of choice, wrap in bacon and hold together with a toothpick. No holder needed.

These were made with chicken apple sausage and turkey bacon.


And these with lump crab and shrimp.


Watch the cheddar cheese because it has a lot of oil and will run out of the pepper if you cut it lenghtwise.
