I am not much of a blogger but I think for my introduction I am going to jot down my favorite grilling recipe to date. As a fairly introductory griller I don't have a huge list of recipes, the usual dogs, burger fare is easy enough and I am experimenting with different ways to grill fish too. As for my tried and true recipe for special friends and family I turn to my shishkabobs.
I like to start with thick cut boneless pork chops and cut them into even pieces, soaking in sesame' teriyaki sauce overnight. I soak my wooden skewers for an hour and slice up red, green and yellow bell peppers as well as a sweet yellow onion and toss them into the mix of pork and marinade an hour or so before I start building the skewers. On occasion I will wrap fresh bacon around chicken and mix that with the pork as well. I set the grill up with both burners on medium heat and rub a fresh piece of fat across the grills before I lay each kabob down to keep them from sticking, I have coated racks but even then some things love to stick.
While the kabobs cook I turn them and baste with the marinade and lay small steaks of fresh pineapple on the upper rack to cook slowly while still getting the nice grill marks we all so love.
I usually serve this with a fresh salad and garlic bread when the occasion comes around. Its simple with the only real time sink being prep with the skewers, but its well worth the work.
As for right now I am toying with making my own kind of apple fruit marinade for the pork. I grew up eating pork chops and applesauce as one of my family's weekly meals as a kid, and the flavors work well off of one another. I may even try some fresh pear puree'.
