Well, since there doesn't seem to be a Lamb category, I'll pop my favorite lamb chop recipe up here.
Apple Glazed Lamb Chops
Ingredients:
3 tablespoons apple jelly
1 green onion, thinly sliced
1 tablespoon soy sauce
2 teaspoons lemon juice
1/8 teaspoon curry powder
Dash ground cinnamon
Dash ground red pepper
2 small red and/or green apples, cut crosswise into 1/4 inch slices
Lemon juice
8 lamb loin chops, cut 1 inch thick
1 tablespoon small fresh mint leaves
Directions:
For glaze, in a small saucepan combine apple jelly, green onion, soy sauce, lemon juice, curry powder, cinnamon, and red pepper. Cook and stir over medium heat until bubbly. Remove from heat.
Remove seeds from apple slices. Brush apples with lemon juice. Set aside.
Trim excess fat from chops. Grill chops on an uncovered grill directly over medium heat until desired doneness, turning and brushing once with glaze halfway through cooking. (Allow 10 to 14 minutes for medium rare or 14 to 16 minutes for medium.) Place apples on grill rack next to chops the last 5 minutes of grilling, turning and brushing once with glaze halfway through cooking.
This glaze works really well on a leg of lamb as well.
