i got tired of injecting my meat with a single needle so i made a multi-needle injector. my son who lives in montana modified a pump up sprayer so you could put an injection needle at the end. i took out the needle and screwed on my injection block. this thing works great. i have used it for brisket, ribs and chicken. the needles will unscrew so i can use longer or thicker gauge needles as well.

about 4 yrs ago i also made my own vacuum box that i call the suck-o-lator. as you will see in the pics i can get allot into it. it will hold a brisket or 2 racks of ribs etc. i don't know if it makes that much difference but it's fun to play with.

to illustrate how much vacuum it can pull at 25" of vacuum if i didn't have the brace across the lid (1/2" plexi) it would suck it in so it looked like a bowl. i blew a lid one time. even with the 1/2" square tube for a brace it still sucks in a little. and if i didn't have the brace in the box it would collapse it as well. that's why most vacuum box's are round and most are too small. so i thunk outside the box and made a box.

i injected it with hot melted butter

i slathered the chicken with greek yogurt as well as some other spices

after i get it to the vacuum i want i flip the blue lever to hold it there and turn the pump of.

ji eventually got it up to about 20" and held it there.

they tasted as good as they look. by the way the needles are sharp. DOH!
