Help would be much appreciated.
I need help im making chicken or shrimp & sausage Gumbo, and it's nice and spicy. Just the thing to warm you up when your either out tailgating or just grilling in the dead of winter bcuz true grillers are nuts ( yea! big ups to all of us, we're awesome!) ok anyway I need sumthing cool to balance out the heat on the palate. What can I pair this little heart(and collar) warmer with? other than a nice cold bewski I mean that's a given lol haha. sincerely...hungry, Jim scarcelli
by the way, f-y-i for ne1 that does actually reads this i just found out that i absolutely love putting "lime" on or in things i just noticed i put it on evrything from salads for dressing to even taking the place of lemon on whitefish. Even putting it into alittle thing i like to call Fiesta Lime Chicken Wings.

Love limes for cooking and dressings...it actually goes good on any type of meat or fish..next time ya'll do grilled shrimp (or boild for that matter) infuse some clearified butter with lime zest..for dipping or drizzeling on the shrimp... making my mouth water...

I totally agreed on that lime bit, I ran out of lemons ,so I tried it on my chicken wings and I also mix some on the lamb chops it actually brigs out the taste beautifully.

Jim, as a spice eater I find that using any kind of creamy cheese dish helps folks stand the heat (somewhat) a dolup of sour cream in the middle of the bowl and a nice big chunk of well buttered cornbread also smooth it out...but the easiest way is to cut back on the peppers or at least make sure you have removed all the seeds and membrain from them prior to cooking...hope this helps or at least gives ya a starting point..
