I rub them the night before, smoke them for three hours @ 225 degrees and then wrap in foil and put in oven @ 250 for two hours and then cut and serve with a sweet sauce and a mustard sauce on the side

I use a 3-1-1 method... smoke for 3 hours at 230 deg. 1 hour in tightly wrapped heavy duty aluminum foil. Maybe add some squeeze butter, brown suge and honey on both sides. Remove from foil and glaze with your favorite sauce for 1 hour.

I also spray it down with apple cider vinegar then close the foil back up and let it cook a little longer~~~~ Doooolicious~~~~

this works for me...smoke at 225-250 for 2 hours, wrap in heavy foil with a little liquid for another 1.5-2hrs then finish off unwrapped. by the time they get out of the foil they are almost there.
