I have been asked to cook 4 whole hogs in May. I've cooked whole hog a pits before, never on a grill. I have 4 gas grills that I will be using, I really don't have any idea about how long to cook them and if I neeed to turn them while cooking. I know that when cooking on a pit I turn the hog near the end of the cook. Anybody that has done this and can give me some advise. I sure would be greatful.

If, I were cooking butts I would not have a problem figuring out how many people, but I know with a whole hog/pig there is more waste then with butts. I do very much appreciate the advise.
Comment by Grizz Adams on January 10, 2012 at 10:03pm ok 100 pounders in this neck of the woods are pigs....you won't need any more time for those that you do for cooking whole shoulders or a batch of butts. Probably 6-8 hours tops at medium heat or you can stretch it to a longer time depending on your schedule. I do the "NON - Normal " size that people want to feed a LARGE amount of folks and the other guys around here the average BBQ pig is 150 pounds dressed weight. Mine are 300 - 450 pound DRESSED weight that I do on my pits. They are unbred gilts that are verrrrrrrrrrrrrrrry low fat so the customer gets enough meat for thier party/gatherings.

Comment by Grizz Adams on January 8, 2012 at 10:00pm I have found it depends on what they are sitting on? If a grate I usually just put them belly down and NOT ROLL Them. Cooking though on gas if you don't have a good drip pan or some thing like that you will have to keep a GOOD EAR to the cooking. Listening to how it is going works better than opening the grill. Also watch the smoke coming out. ABOVE ALL IF you see and HEAR it start to FLAME UP>>>TURN OFF THE GAS AND HAVE SOME THING to HELP PUT OUT THE FLAME BEFORE OPENING IT. I myself have 2 pits in my Cooking equipment. Also 8 charcoal grills of VARIOUS sizes and 2 gas. Started when I was 7 and 40 yrs later have cooked Several THOUSANDS of pounds of Pork yearly aswell as chicken and goat. Do you have any idea how LARGE of the ""Hogs"" will be in weight??
