My Newest BBQ Sauce 7/13/08
Current mood: accomplished
Hi,
I made an excellent bar-b-que sauce Friday night and used it on smoked chicken Saturday. You'll have to forgive me, but I'll try as best possible to give as accurate directions as I can here. The problem being, I don't measure anything, I just add and taste. However, this one got great reviews. See the pictures in my pics: The Grill Album
Cranberry Juice Cocktail Bar-B-Que Sauce:
ALL MEASUREMENTS ARE INFINITELY ADJUSTABLE TO SUIT YOUR PERSONAL TASTES. Personally I like my bar-b-que sauces less sweet and leaning a little to the tart side, to each their own. This one does have a nice medium fruitiness to it.
3 cups, Tomato Ketchup
1/2 cup, Worcestershire Sauce (yes, I had to look at the bottle to spell it)
1/2 cup, Cranberry Juice Cocktail
1/4 cup, Apple Cider Vinegar
1/4 cup, Vegetable, or Olive Oil
1/3 packed cup, Brown Sugar (I used Splenda/brown sugar mix)
5 cloves, Minced Garlic
1/3 cup, Finely Diced Onion
1/3 cup, Finely Diced Green Pepper
1 tbls., Thyme
1/2 tsp., salt
1/2 tsp., Ground Black Pepper
1/4 tsp., Ground Cayenne Pepper
Zest of one Lemon (use a fine grater and grate off just the yellow outside of the peel, not the white inside)
Mix all ingredients in a large sauce pan and bring to a low boil (careful, very similar to spaghetti sauce) for 5 min. Let simmer for 10 min. Stirring/whisk frequently to kind of suspend the oil in the mix. Cover and let sit over night to give the flavors time to merge. Stir/whisk again, use and have fun with it.
Hmm... Cranberry Juice Cocktail Bar-B-Que Sauce on a smoked turkey, Thanksgiving anyone? It just might be done. Stay tuned.
TTFN,
Chuck
