hello my name is James and i have been a professional chef for over twenty years and have been working in restaurants ever since I was conceived in one 44 years ago. im not joking about that either, my dad owned a bar and grill and my mom was a waitress he fell in love with and married...I was produced from that happy marriage in booth #9 so yes i guess you could say I was born into this business. i have cooked at some of the best known restaurants in America and have cooked for well known entertainers,celebrities and politicians during my career, however the greatest people I have had the pleasure of cooking for are my friends and family.. I also served as a mess management specialist in the U.S. Navy, while that wasn't the highlight of my cooking history I am proud of my service... anyway the subject at hand is grilling so let's talk about fire, smoke and good time's... feel free to post your comment's, pics or recipes on my page and join the party!!!

an unwanted reason for grilling

this morning we unexpectedly and sadly lost the matriarch of my wife's family, her grandmother, mother of thirteen children, grandmother and great grandmother to many, many more. grandma loved to eat, was a hell of a good cook in her day and never turned down a meal... good, bad or otherwise. you could always look in grandma's freezer and find leftovers from the last four bar-b-ques... being the mother of thirteen kids was a hard habit to break, she never threw out one scrap of food...I once… Continue

It's not much of a recipe and The Ultimate more so earned it's b/c of it's original size but I prepare it by using 80/20 ground beef (I would love to someday get a meat grinder and do my own) and adding salt & pepper and worcestershire sauce. I then dice up a jalapeno or slightly hotter pepper and add it to the beef. Lastly, as far as pre-cook prep, I add some grated sharp cheddar cheese. Towards the end of grilling I will slightly grill a sliced onion and place it on top of the burger and then add a slice of cheddar cheese and let it partially melt...there you have my version of The Ultimate.

Another version (the lazy version), I will substitute the pepper and cheddar cheese by grating a block of jalapeno monterey jack cheese but that doesn't always give enough "bite" of the pepper.

In general it takes about 24 hrs. of cooking time on a very big rotisserie. I would have to get you a picture to do it justice, but it's usually made out of about a 200 gal. oil storage tank, like a lot of people around here used to have sitting on the outside of their house when more of them heated with fuel oil. A whole hog though, it makes a lot of pulled pork sandwiches and feeds a lot of people.
Just a thought and it is grilling on a grand scale. LOL

Give hime a bottle of catsup and a match he would be grilling. I think he used pop in his sauce, there was always a bottle of coke around.
Like the idea of neighborhood BBQ. I'll try it out this summer. Of coarse for me it is all about the food!!
