We serve our either way, wet or dry, I let the customer decide how they want it, and I find that most prefer it with the sauce on it. I think that might be a regional thing though.

I use seasoned wood as my heat source and I wouldn't say "green" wood for flavor but I like my fruit woods to be more fresh so that the sap can give you more flavor, the drier it is the faster if burns and the less flavor it can…

Steve, Good point about the beer. i'm not sure what you're cooking on but my Lang is wood fired but, with the reverse flow you don't have that problem of oversmoke. We use wood as both the heat source and the flavor.
