Hello everyone, I want to make a smoked brisket this weekend for family coming over. It is only about 6-8 pounds. can someone tell me in their opinion how long i should smoke this and what temp they feel is the best. I have never done beef brisket before. I just want it to be tender and juicy and not rubbery. I plan on just putting a light rub on it and maybe just a little injection. Please help.

using coffee in bbq/smoked foods.

Anyone use coffee for any of there smoked foods such as beef or pork. either as a rub or maybe an injection. I have seen this used on a few tv shows etc and i really like coffee and would like to try it but don't know what is the best way to use it. Also i don't know about quantities and strength of brew. Any ideas or suggestions would be much appreciated.

stuffed jalepenos

Hello all,

I am having a fantasy football draft here in about 3 weeks, i always cook for the group and i was wanting to smoke some stuffed jalepeno's, i have a question since i have never done these but know how to core them and stuff them. the question i have is how long should i smoke them and do i need to put these in a jalepeno holder or just put them on the grill grate. any help would be appreciated.

My plan for stuffing these would be half of them with cream…

grilled shrimp

here is one of my recipes i like to feed my friends with.

3 to 4 pounds of medium sized shrimp, deviened and thawed

melted butter with garlic powder added, to taste

hot sauce- whatever kind you prefer

brush the shrimp with garlic butter and then add hot sauce to the shrimp. let them marinade in pan for about 15 minutes or so stick on grill and let them simmer until done.

Hi Rod , sure they are stuffed with shredded beef made from a chuck roast I did first on the Egg ,then I used some flour tortillas and made burritos top with can sauce and cheese put back in the Egg at around 325- 350 for 30-40 min they did turn out pretty good ----thanks

i just bought me a traeger grill in april of 2009, I am learning how to use it finally since they do have a learning curve, but i have been smoking and grilling up a storm with it, i have done lots of pork ribs, pulled pork, shrimp, burgers, etc on it and everything has been coming out great, i will later post pictures and recipes as i can .
