Hardwood Lump Charcoal (not briquettes)
Wood Chunks ( I soak mine over night so I don't forget)

Grill Prep

Set up the grill for indirect grilling. The goal is low and slow. Try to keep you grill temp below 220 degrees. This will enable more smoke to permeate the birds. Use a drip pan. I learned the hard way that ants love grease and will attack the grill not to mention the area around the grill where excess grease has dripped out of the bottom.

Bird Prep

I like to leave the skin on the birds. It helps maintain most of the moisture in the bird so that they don't dry out. The salt will also make the skin absolutely delicious. Put the rub on a little prior to cooking. Prepare your favorite baste ( make it sugarless, nothing worse than burnt sugar on meat).

Cooking
3 to 4 hours on the BBQ will give you a killer meal that will make everyone believe your a pro. Add fresh wood every hour and apply baste at the same time. You are good to go when the meat is at an internal temperature of 180 or higher. Allow to rest for 5 minutes and serve whole. Provide lots of napkins.
