"try an indirect cooking method with a pan of hot water above coals keeping heat of your grill around 225 degrees. You may also want to let it overnight with a dry rub, or brine depending on your preference"

weekend grilling

Up here in Yankee country (Connecticut) I have a brisket in my refridgerator laying in a rub and some chicken in a spicy lemon marinade just getting all sorts of infused with flavor. Will fire up the grill around 7 tomorrow morning and slow cook the brisket and put the chicken on later today will be dedicated to some salad making. Will post pictures Monday.

I have been grilling for well over 20 years now it started when I was about 12, flipping burgers, sausages and spinning dogs at family backyard get together s. I have now grown bored with just the traditional family style and have recently grilled whole roast beefs, pork shoulders, kicked up ribs, I also try different variations of marinades for chicken.
