Hi Linda - I've cooked tri-tip with lots of different rubs and marinates. Couple of things to try - rub some olive oil on the tri-tip and generously sprinkle on your favorite rub, McCormicks Montreal steak seasoning works pretty well and I occasionally use a Jamaican Jerk rub on mine.

I'm also a hot sauce maker, www.allspicecafe.com and I make a marinate out of the Chipotle Garlic sauce with some apple cider vinegar, sea salt and pepper. Let it marinate for a good 6 or more hours before grilling.

On the grill, I sear the tri-tip on each side for 6 - 10 minutes on high heat and then slow cook it on indirect heat until the meat reaches about 130 degrees (about 45 min to an hour at 250 degrees). Let it sit for about 5 minutes and then you're good to go. I also like to slice the meat really thin.

Getting hungry just thinking about it!

I don't want to go to my grave w/o at least giving it an all out try. So, you ask me for some tips, please allow me to ask back, any suggestions for me to approach the most negative person I know, regarding starting "MY" BBQ biz. Hell, she wont even back me when I wish to enter BBQ contests.
OKAY, I know what many are thinking... leave her, take your balls and go home.

I wish I could give you some tips... however, my wife knows my passion for whopping up some of the best BBQ and fun and how much I have always wanted to run my own catering service. I have the biz savvy and gr8 fun loving spirit and being the total clown I am, people can't get enough of my recipe for fun and good food. Yet, she forbids me to get into any food service biz. According to Wis law, if I go to a bank for seed money, she must come along. NOT HAPPENING.

the pups are 2 this summer and have good homes and we get to see them. we still have the mother which is 6 we just had her fix she has had 17 pups in 3 yrs so it is time for her just to be a dog and a great friend. they are pure breed alasken malamute we had the dad to. as for mothers day my mom is gone so we don't do much but we will probly get together with my brother and his family and do some grilling. Lea which is the pups mom will probly have her share as she usely does.

I get my tenderloin from Costco(swift brand). I marinade overnight with, garlic pepper and cajuan spice. indirect heat for about four hours at about 225 degrees

Hey Linda, Thursday, May 14 is the opening day. All teams are allowed to load in their grills on Saturday the 9th and start setup on Sunday the 10th. Most teams are completely finished and cooking by Wednesday the 13 so they can have their private team parties . A lot of people are there Wed. for team parties. Hope this helped. Memphis is not my favorite place but I wouldn't miss the BBQ fest. It's done right !

Thanks a bunch; I'll have to try them soon; OH, do I know about jalapenos without gloves!!!!! I cored approx 250 last August in Cali. helping with my son and daughter in laws reception.......my hands had a burning sensation for several days!!!!!! LOL
