Love limes for cooking and dressings...it actually goes good on any type of meat or fish..next time ya'll do grilled shrimp (or boild for that matter) infuse some clearified butter with lime zest..for dipping or drizzeling on the shrimp...…

I totally agreed on that lime bit, I ran out of lemons ,so I tried it on my chicken wings and I also mix some on the lamb chops it actually brigs out the taste beautifully.

Jim, as a spice eater I find that using any kind of creamy cheese dish helps folks stand the heat (somewhat) a dolup of sour cream in the middle of the bowl and a nice big chunk of well buttered cornbread also smooth it out...but the easiest…

Help would be much appreciated.

I need help im making chicken or shrimp & sausage Gumbo, and it's nice and spicy.  Just the thing to warm you up when your either out tailgating or just grilling in the dead of winter bcuz true grillers are nuts ( yea! big ups to all of us, we're awesome!)  ok anyway I need sumthing cool to balance out the heat on the palate. Up l'm late.... thinking about garden party I'm having tomorrow and preparing food for my friends, neighbors who are coming. Mixing hickory wood w/mesquite coals and will be serving steaks & ribs for the grownups and hot dogs and hamburgers for the kids. Will post pics of the event tomorrow....!!!

Glad I found your site. Should be a blast communicating with others, sharing recipes and all. Just talked to a friend who came back from a trip to NAPA Valley. Said next time he goes, he's taking some briquettes with him to show Californians what real grilling is...!!! LOL...!!
