Dave, its a fact that wood burns hotter than coal and coal burn longer than wood. With that said start off with 25% to & 75% coal to wood. This will get your grill nice and about 225 degree in a shorter time. then add lump coal 40% to 60 wood. try to keep that fire as close to 225-250 as you can, dont open unless your turning. Now this is the trick used your fruit wood first Pecan, peach, apple or cherry this is your flavor. Wrap your Brisket and use 40% or less coal and the rest oak or what ever hard wood in your area for heat. Wood burns hot and it wont take a lot, in Texas some wood is cheaper than coal ! So for the 1st 4 hour nice wood, then wrap Brisket . and just keep it at 259
