I do something simular at times Brian. I will spray the towels down with cooking spray. The disadvantage is you want get the bacon smell. Thats actually the way Ben Lang said he prefers to light the Lang Smoker.
Mike this is a pit at a middle school in Unionville NC they haver 1 bbq a yr in november. They have been doing it for over 50 yrs and make around 15,000 lbs a yr, their rev is a little over 100k

I'll do pictures as soon as I can. We only took 21 in MIM this last year but it was better than last place. # 238. I didn't take my grill and I wasn't used to the one we used. Learned to make some fine BBQ beans though. I quit my team. Tired of the BS. It didn't take long to build another team. We haven't competed yet but will soon if the money comes around. The grill was a trailer grill, roughly the size of a 4x8 cargo trailer. The deck plating and a few other pieces were diamond plate, the cooker was black, and I "think" it was from Brinkmann. I know it was a limited edition and very few of our stores sold them at the time. We sold 1 all year long and it was very expensive, even for the market up around Lake Norman in Huntersville. I tried finidng it on their site this morning and even did a google image search but no luck. As for te portable weber I used to have with fold up legs for camping and used it at my apartment since I could stash it and hide it from the landlord:p, they frowned on grilling heh.
Yup looks nice.) At one point in time years ago we sold a red and diamond plated double smoker at Lowes, duel chamber cooker with a huge smoker box..was a beautiful thing.) I have my eye on a couple different Weber built in grills, one of these days I want to build a outdoor kitchen in the backyard, but thats a long off dream for now..gotta finish paying the house off and getting the kids into college first lol.
Hi Dale, nice to meet you. Right now I have a hand me down propane unit, Grillmaster that I did some work on, lil' brothers girlfriend gave it to us to tinker with. I used to work at Lowes and know its just a basic unit, nothing fancy, but It beats my old weber table top charcoal unit. I miss the flavor of the charcoal, but being able to cook 12 shiskabobs at once as well as grill up some veggies and fruit on the top rack more then makes up for it. My next adventure is with fish, I love grilled fish and I want to play with some cedar and spiced woods, try out some salmon, talapia..etc.etc.
Dale, I'm sorry about your baby. I lost my Dachshund over eight years ago and I'm still not over it. He was, and always will be my best friend. He always met me at the door when I came home from work with his ball in his mouth, He would drop his ball and jump up in my arms and kiss me, then grab his ball and through it at me. We did everything together. He slept with me every night. If I layed on the couch, he was with me. I ran him in the Weinner Dog Nationals, in Memphis every year. He won every year until he found out what girls were. He still won, but in another way then. I'll post some pictures of him when I learn how. I'm sorry about your puppy. I do feel your pain. I hope it gets better soon.
That's what it is all about. You're a good man. The weekend after MIM i am doing a brest cancer thing in my home town. I don't know how many chickens I'm supposed to cook yet. They just said a truck full. Whew ! I worked in Wilmington after Hurricane Fran a few years ago. What a beautiful place. Even torn up ! We stayed at Holdens Beach. Now that was COOL ! I was there as a Insurance Adjuster. Not my normal job. I took vacation and made lots of money. Got pretty good at it. Couldn't stand to be away from my dog.
