I have a water smoker and a char-griller duo. I start with charcoal, then go to wood for smoke for and hour or two, then straight charcoal til it is done. And this next batch is short ribs.

to find info on tightening up air leaks on your duo and some SFB mods to help lengthen your burns in the smoke box. One easy one is to use foil around the lid of your charcoal side, during a smoke to keep the smoke/heat in...

The duo with SFB (side fire box) is a versatile, entry-level rig, so it isn't perfect, but you can get great results! I love mine and the folks on the BB website forums are a HUGE help... Many of them are fellow Char-Griller owners...

Gotta add the side fire box. You'll love it... Easy to load it up for long indirect smoking of large cuts...
