Hey Joe, That tin foil wrap is the whip!!! it holds in all the fat and juice so the meat stays moist. The smoke'n and flavor goes into it the first couple hours. after that it's all about tenderizing the meat.

I usually have done mine for 6-8 hours, have not wrapped in foil before. will try that next time. Thanks for the tip

About 10 hrs. 1.5 hrs per pound and about 4 hrs into it wrap it up in tin foil for the duration. Thanks for asking
