Jody, this is i guess what you could call a chicken wrap or chicken enchilada, Basically cook your chicken.(i use chicken breasts cooked on a traeger wood pellet grill) Take tortilla shells and spread ranch dressing on one side of them and sprinkle it with fajita seasoning, or your favorite seasoning. After your chicken is cooked cut it in to fine strips and place on the tortilla shell, put cheese on (your preference, i use a combination cheese). roll it up then like a burrito. i make a sour cream sauce that goes on top of it. that is 1/2 cup of butter melted in a pan, add 2 tablespoons of flour to make a rue, slowly add 1-1/2 cups of milk and a pint of sour cream. stir until well blended. then add a couple of teaspoon fulls of taco seasoning. (to taste). I then put the chicken wraps back on the grill for about 10 to 15 minutes to melt the cheese and reheat everything and then i put the sour cream sauce on the top of the chicken wrap, add tomato, lettuce. and rice on the side. That is about it. My family loves this meal and it is actually quick and easy to make.
