Here's something my wife loves. And guys, you know that if your wife is happy, all is good. I soak fresh corn, (still in the shucks) in water with a little bit of salt for about half an hour. Put them right on the grill and cook them. When done, unwrap them, add your favorite seasoning, butter, or whatever and enjoy. Of course, the corn goes really well with something else that has been grilled right next to it. (steak, chicken, chops, burgers)
Grill vegtables that have marinated in chopped garlic, EVOO, lemon juice and Original. www.instantgourmet.com. Make a lot and enjoy. Leftover vegtables...Should be tomato's, zuchanni, baby egg plant, baby bella's mushrooms and yellow squash. Cut these up and put in a baking pan. Add chopped pork, recently smoked. Mix well. Make instant potatoes, season to taste and put on top of veg's. Bake until browned nicely. This is really good.
Being a borderline diabetic, I have had to find alternative veggies. One thing I found I could eat, believe it or not, is Sweet Potatoes. I cut them into medallions, blanch them, coat them by putting them in a plastic bag with olive oil, season them with Cavendars Greek Seasoning and placing them right on the grill.
Also, with corn. Wrap the cobs with bacon and then wrap with aluminum foil. Cook on the grill. It gives the corn a bacon flavor and the bacon a corn flavor.
Grill pans are great, but an economical alternative is to cover your grill rack with heavy duty aluminum foil prior to starting your fire, and perforating it. I then mop it down with oil (What I'm cooking depends on the type of oil) so the veggies don't stick
I love to try new things- yesterday I put corn on the cob cut in 3's, broccoli, onions, green peppers, potatoes and sausage with butter on the grill(obviously!) I of course added butter and salt and pepper, then wrapped it in aluminum foil. Now veggies are one of my favorite things to grill, and I need more recipes- anyone have any ideas?? They will all help and I gaurentee most will be tried!! thanks
Along with the corn, you might try a baked onion. Take a white onion and cut a cap off one end by angling you knife at a 45 degree. Hollow out enough room to place a beef bouillon cube and pack with butter. Replace the cap and wrap with aluminum foil, Place upright in the coals and cook with you meal.
