Please help this poor, misplaced Yankee out. I followed my bride to Texas so she could take care of her mother. I've been trying mightily to smoke a proper brisket, but it's always either too little magic (tough brisket) or too much smoke. I have a CharGriller with a side smoke box.

Ok. What is wrong with you guys. Here it is the 4th. Grillin, Smokin, BBQ GOD Day and no one even talking about what kind of meat their fixin. What is wrong? Great American cooking day today. Well, I've got a 15lb brisket that has been marinated overnight with my special rub and a layer of molasses. Can't wait to put the smoke on it. Pecan especially. Then I have 10 chicken quarters that I injected with a Teriyaki. Will through those on the grill. What are you doing?

Randy Pope, "Mine is Iron works BBQ in austin. they have some beef ribs that are like steak on a bone an they are huge..Plus it is neat to read the brands on the building from the branding irons".

I love the beef ribs at the Iron Works! Have for a very long time.
I have a list of places and past places to eat in the Austin area.

you might want to make reservations now at the Circle T, when i called last year, the hotel only had two rooms left in may! that hotel is awesome! very nice and clean and the staff was super nice!

Raul. Go north on US 183A (the toll road). When you get to US 281 turn right (north) til you hit Hico. You'll have fun at the Cook Off and there is a GREAT hotel in Hamilton called the Circle T where you can stay if you're planning an overnight trip. If you go to Hico, please look me up. I'd love to meet you.

Hey Raul! Hico is about an hr and half north of Lampassas, it takes me about 2 hrs to get there, and its worth the drive! it's in beautiful Hill country! just north of Hamilton

Texas Steak Cook Off in Hico, Texas is on Saturday, May 15th this year. If you attend, look for the Monster Meat Cooking Team and ask for TXharleyman. I'll look forward to meeting you. Plus, it's a real fun day for the entire family. Come on down!
