A couple of weeks ago, I bought an eleven lb. Berkshire pork but, two slabs of Berkshire spare ribs and an American Wagyu brisket (now I'm broke) at Paradise Meats.  The butt was the best pork I've ever eaten, the brisket was fantastic and the ribs were to die for.  The butt and ribs were both $4.75/lb. and the brisket was $3.95/lb.  Not something that I would buy every day, but I'll be taking Berkshire pork to the American Royal.

They look FANTASTIC!!!! What kind of wood do you use? I like Pecan myself!!
I used Hickory with the pork butt and 4 chunks of pecan and 2 chunks of cherry for my ribs.

Paradise Meats is located in Trimble, MO. All meat has a label stating where the meat came from. My ribs came from Missouri, the butt from Iowa, and the brisket also came from Iowa.
