So, I discovered this great little add-on to my Weber 22.5" Kettle. And it has the tackiest name on the planet, but boy does it work. The Smokinator 1000. A piece of stainless folded and shaped to form to the inside of a kettle, hold about 60 briquettes along with some lump wood. Add in a water reservoir on top, makes for some great indirect cooking. For our twin's baptism, I smoked a 15lb brisket and a 16lb pork shoulder to feed the masses. Had monster good reviews for both. The same vendor makes an add-on rack to extend your cooking space upwards into the bell of the kettle.

I do something simular at times Brian. I will spray the towels down with cooking spray. The disadvantage is you want get the bacon smell. Thats actually the way Ben Lang said he prefers to light the Lang Smoker.

May be a little late on this thread but when backpacking I take paper towels soaked in bacon grease from the freezer. They light quick, burn hot and long. Makes you hungry too. Now I use them when starting any fire.

Ok I finally let all that sink in, OMG that is a whole heck of a bunch of Q..I'm impressed..no, not the right word...flabbergasted is closer..struck speachless...I want one of those :) I can't even imagin the logistics that would go into some thing that big..I have done or at least been part of Q's that served a couple of thousand folks..but cracky, that would be in the tens of thousands...amazing...thanks for shearing that with us...when is the next one scheduled?

Steve, they only use it once a year. thr last figures I got was a little ove 100k in sales. It rally is quite an opperation. All volunteer. They sale bbq plates, Pints of bbq, and brunswick stew is served with the plates or by the pint or gallon. I have more picks on my page. they have a building just for storage and making the stew. The fire dept and police dept usually make the stew. The q has some of the strongest hickory flaver that I have ever tasted. Personally I like using mixed woods but this is classic NC bbq.

Go to your page and double click the pic and then right click and save as should take you to a file for pictures (windows libraries), save and then post as you would any other,,

yeah thats the pitts there are a couple of other pics of interest the girls colling the que and the huge drum with the fire making coals. you don't notice how huge it is untill you look at the metal cart at the base of the barrel, How did you do that I was trying to e-mail it to myself so I could save it as a file or something. When I went back to retreive the e-mail It wasn't there and I saw where you had posted something, Thanks
