Cheesy Corn Crunch
you need
4 large cans of whole kernel corn
3 small cans of cream corn
1 half small box of corn flakes about half crushed up
2/3 to 3/4 pounds of shredded cheddar cheese
1 med onion dice fine
1 tsp of olive oil
1 tsp butter
black pepper to taste

I large mix vessel (bowl)
1 large realisable plastic bag
1 12 inch DO
21 to 30 charcoal briquettes

dice onions.
place corn flakes in plastic bag and pound with your hand
mix all the corn together with the onions (after onions are cooked) and black pepper

heat DO add olive oil and butter until butter melts
add dice onions and cook until clear then remove and set aside
place a thin layer of the corn flakes in the bottom of the DO
add a layer of the cheese
spoon in a layer of the corn mixture
add a layer of cheese and another layer of corn flakes
repeat until Do is full then top with cheese and cornflake
cover and cook with 7-9 coals on the bottom and 14 to 16 coals on top (approx 350F) for 45 to 60 min.

Grilled Asian Shrimp Salad:

1 lb of peeled and devained raw shrimp (Large)

couple of carrots

couple of stalks of celery

2 apples any kind peeled and cored

hand full of baby bella shrooms

1 med onion

2 oz of rice wine vinagar 

1/2 tsp of 5 spice

! tbs of dark brown sugar

dash of garlic powder

dash of black pepper

1/2 tsp of sea salt

1 tbs of olive or seame oil

match stick the carrots, celery and apples about 1 1/2 inches long...slice the shrooms and the onion thin layer the carrots celery and onions in a grilling pan...layer the shrimp, apples and mushrooms on top of those sprinkel with the sea salt...place on low grill... mean time mix the rest of the ingredients in a smal bowl wisk to combine well..toss the stuff in the grilling pan so it mixed well then drizzel on the liquid...allow to cook until the shrimp are nice and pink..add cheery or grape tomatos as a garnish serve immediatly..

Silly me, I wrapped up the pepperoni bread and didn't get any pics..not gonna open it now...has to set wrapped for at least 3hours...maybe I'll get some before dinner :D :D

Sides from Monday's supper

Biscuits on the grill are just like in the oven..I have a gas grill which is nothing more than an oven..got the temp at about 375 F and put the biscuits in a round cake pan and cooked them for about 16min..all the while grilling the chicken..i've done this before placing the cake pan right on the grate..not so good...this time I raised it up about an inch off the grill grate on a rack, worked much better...


Fried corn...1 can drained and rinsed..heat iron skillet to very hot add 1 tsp olive oil and a table spoon of unsalted butter...heat untill butter starts to brown...add corn, add 1 tbs off paprika stir to mix and cook until slightly browned on the edges, season to taste..this is actually an old dish used by farmers to use up thier table corn..also called..old corn...or can be made from green or undried dent corn (for the non-farmer types that's feed corn that hasn't set)..which ever you use the kernals should be very firm...My grandmother used to add red pepper flakes to her's...

beets were done in a non-reactive ss bowl in the fridge :D :D as for grilling fruit..pineapple is probably the easiest for obvious reasons but I've done apples, pears, peaches , neterines, plums, oranges and star fruit...oh and bananas..got to be real careful with the naners they come apart real fast...
