I do not consider myself a pro with the dutch oven but it is an outdoor cooking activity that I enjoy. I purchased an alloy dutch oven a few years ago to take camping and have had a lot of fun making diferent concoctions in it. I took a dutch oven cooking class through the Iowa DNR and learned some of the basics and some good recipes. I often make side dishes with my dutch oven while my smoker is fired up!

I have been thinking about making a stand for my Dutch Oven that would allow me to use it easier The base will be a car rim and the top would be a steel plate here is a picture of my plan.

The weather is getting a slight bit cooler so I decided I better pull out the ol Dutch ovens and get some potatoes cooked up. I have a outdoor fire pit that worked great to cook in. I used turkey bacon this time because we had it and I also used italian sausage. It turned out really good, there was just enough oil to cook the taters. Next meal I will add eggs to the left overs and make breakfast burritos. If you have not tried cooking in a Dutch oven give it a try, it's pretty much fool proof.

Best Peach cobbler that I have ever cooked, in a Dutch oven, outside of course :)

RECIPE : 6 jumbo cans of sliced peaches in heavy syrup; drain only 3 cans
2 boxes of white or vanilla cake mix
1 stick of butter

Directions
A cast Iron dutch oven is ESSENTIAL for this recipe, nothing else works.
Layer 1: Drain 3 cans of peaches and put in cast iron dutch oven
Add 3 more cans of peaches, do not drain liquid, to the dutch oven
Layer 2: Pour both boxes of cake mix over the top of peaches (do not stir)
Layer 3: Slice up one stick of butter into little pats and drop all over the top of cake mix
Put the lid on the dutch oven and put in the campfire, near hot coals, not on the hot coals.
Place hot coals on top of the dutch oven lid. VERY IMPORTANT.
In about 20 minutes, give the dutch oven a 180 degree turn, to insure an even bake.
In about 20 more minutes, check under the lid.
Dessert is finished when peaches are soft and carmelized, juice will really thicken, you will have a hot, bubbly , golden brown, topping.
Don't let the dutch oven turn all glowy red, it'll burn

KILLER BEANS

1lb hamburger (browned and drained)
1 can kidney beans (rinced and drained)
1 can butter beans
1 can pork and beans
1 cup brown sugar
8 oz ketchup
1 packet dry onion soup mix
1tsp Worchestershire sauce (I usually add to taste)

I have had a ton of compliments with this recipe and have added hot sauce to it from time to time It compliments a smoked porkloin like no other! I have also made this for tailgaiting and used Tostitos scoops to snack!
I have also heard the name calico beans and cowboy beans associated with this! ENJOY!!!!
