i've done fruit kababs of hard fruits (pineapple wedges; peach, plum, pear or apple 1/4s) with a glaze of brown sugar mad liquid with just a bit of orange juice, cinn. and/or nutmeg optnl. grill over low&slow heat so as not to burn the sugars and serve over vanilla ice cream.

I have just recently found this wonderful website and I have a couple of different receipes that I will get put together for dessert that will just totally knock your socks off. One of them I have to thank Al Roker from the Today show for and the other I ran across. I look forward to many great conversations here.

Pineapple Upside - Down Cake
6 tbs butter
1 cup brown sugar
20 oz. can pineapple slices
Pecan Halves
Maraschino cherries
1 box yellow cake mix
3/4 cup pineapple juice
1/2 cup rum
1/4 cup veg oil
2 eggs
1 tsp pineapple or lemon extract

Preheat oven, grill or pellet smoker to 350
In two 8-9 inch cake pans , melt 2 tbs butter in each pan. Sprinkle 1/2 cup of brown sugar in each pan. Arrange pineapple slices on top of brown sugar in each pan and then maraschino cherries in center of each pineaplle slice and place pecan halves between pineapple.
Combine cake mix, juice, rum, oil, eggs, & extract. Mix with mixer for two minutes. Divide cake mixture between both pans.
Bake for 30 minutes or until wooden pick comes out clean. Immediately invert cakes onto serving platters.

Last night I went to a BBQ cooking school class and he made pineapple upside down cake on the grill! It was amazing and very easy. If anyone wants the recipe let me know.
