I appreciate LOW and SLOW...but I REALLY love FOIL BAG cooking with a GRILL mark finish. The Marinade that's left over from the "boiling" part in the bag can be dumped into your serving dish as it's no longer a threatening, bloody mess but a boiled, cooked gravy of sorts. (a little Wondra with that WILL turn it into a gravy) It's tricky to get that remaining marinade into the dish and not on the grill, so I double foil bag it sometimes. You will NEVER have a dry product using foil bags. Oh, and despite the stereotype, it's NOT a Mexican thing. (...and if it was, SO WHAT...doesn't EVERYBODY like Mexican food?) Anyway, a BIG ROLL of foil from COSTCO is an investment in infusing taste and moisture into your cooking! Works with veggies too! PIX to follow sometime! Later dudes! SAVE your kitchen...grill it!
